Pastured Beef

The Pasture Farmer offers beef raised on pasture. The Pasture Farmer raises animals while offering no GMOs, no corn, no soy, no grains, no chemical fertilizers, no hormones, no vaccinations. Just rich, multi species pasture and woods for food. Hay offered in the winter. Free choice minerals and well water.

We breed our animals and raise them their whole life on our farm to ensure that we can feed them our pastures their whole life.

PRICE $ 5.15 / lb hanging weight

Beef is priced by hanging weight. Hanging weight is the weight of the cow at the butcher after the cow has been slaughtered and the skin, organs, head and feet removed. This is the carcass weight with the meat and bones in it and the hanging weight is approximately 60% of the live cow weight.

We dry age our beef 11-14 days. Then the beef is cut into the various cuts (roasts, steaks, ribs, hamburger, etc.) and divided into 4 (1/4 cow) sections. We instruct our butcher to divide equally (some front cuts to each 1/4, some back cuts to each 1/4), however there will be some variability between quarters. 

The weight of 150 lbs hanging weight is approximate for 1/4 cow and can range from 100 to 200 lbs depending on the cow. At the time you order let us know if you wish a "larger" or "smaller" quarter and we will try to accommodate your request. Your actual "freezer weight" (the amount of meat after the cuts are made) will be somewhat less due to shrinkage during the aging process and some bones and fat discarded during the cutting/butcher process.

$4.50/lb includes slaughter, dry aging and butcher fees. All items are required to be picked up from our butcher within 5 business days of ready notice given; a $0.05/lb hanging weight per day charge will be assessed after that for freezer storage fees.
